Gourmet Recipe: Salmon Tartare

It’s Friday so it must be fish, and what can be nicer than settling down in front of the fire with a nice Sauvignon Blanc and a plate full of delicious Salmon Tartare.

Ingredients (makes one portion)

1 egg yolk
30 mls olive oil
Juice of half a lemon
Salt and black pepper to season
5 gms coriander leaves, chopped
5 gms green finger chilli
5 gms red onion, chopped
130 gms fresh salmon, cubed small
5 gms capers
5 gms parsley, chopped
Method: In a mixing bowl, add the egg yolk to the salmon and then carefully fold in all the other ingredients, season to taste and serve on iceberg lettuce and cucumber crudités with warm bread. Optional sprinkle with black sesame seeds.
